Tired of Mixed Veggies? Try Zucchini Fritters for a Tasty Clean Eats Side Dish!


Looking for a clean side dish that isn't the same old mixed veggies? Well then, boy, do I have a delicious recipe for you--- zucchini fritters with a Greek-dill sauce! These babies are crispy on the outside, moist on the inside, and smothered in a tangy sauce spiced with dill. Can you say YUM?! Keep on reading for the recipe, guys!


Recipe:
Zucchini Fritters (Serves 2; Makes 4 Fritters)

1 Cup shredded zucchini (About 1 zucchini--- I popped mine into the food processor, until it was nicely shredded/grated)
1/2 Cup oat flour (To make oat flour easily, you can grind up 1/2 Cup of oats in the food processor, until it becomes a flour-like consistency)
1 Teaspoon Italian seasoning
1/2 Teaspoon garlic powder
1/2 Teaspoon pepper
1/4 Teaspoon salt
1 Egg white

In a bowl, combine all ingredients. Form 4 patties with the zucchini mixture. Heat a lightly oiled pan over the stove to high heat. Place the zucchini fritters on the hot pan, flipping when the fritters start to brown (about 2 minutes on each side). Remove from heat.

Recipe:
Greek-Dill Sauce (Serves 2; Covers 2 Fritters)

2 Tablespoons plain nonfat Greek yogurt
1/2 Tablespoon lemon juice
1/2 Tablespoon unsweetened almond milk
1 Teaspoon dill weed

Mix together all ingredients thoroughly in a bowl. Spoon Greek-dill sauce over the zucchini fritters just before serving.

My husband gobbled these fritters up, dipping them eagerly in the Greek-dill sauce! We both absolutely loved them (they're right up there with cauliflower tots in my opinion, which is saying something!), so these WILL be making a regular appearance at our clean eats dinner table! Enjoy guys!
